Ingredients

  • - 500 g roasted / smoked salmon
  • - 300g roasted pumpkin chopped into cubes
  • - 12 cups of green salad choice (lettuce, baby spinach, arugula)
  • - 1 and ½ cups cooked corn
  • - 1 and ½ cups peeled and sliced cucumbers
  • - 1 cup dried cranberries
  • - ¾ cup olive oil
  • - 2-3 tablespoons vinegar
  • Salt and pepper to taste

Directions
